Le Prieuré
DE SAINT-CÉOLS

3 route de Sancerre, 18220 Saint-Céols, France

The Menetou-Salon vineyard

Just outside Bourges, between the Pays Fort near Sancerre and the Champagne Berrichonne plain, Menetou-Salon covers 10 villages and around 600 hectares. It has been an AOC since 1959.

Le Prieuré de Saint-Céols covers 13 hectares at the north-eastern end of the appellation: 10 ha of Sauvignon Blanc and 3 ha of Pinot Noir. Pierre Jacolin founded the estate in 1986. We took it over and farm it under organic certification.

An ancient seabed: Portlandian limestone over Kimmeridgian marl, the same bedrock as in Chablis and Sancerre. It is full of small comma-shaped fossil oysters. These white soils drain quickly and stay cool. They give Sauvignon Blanc salty tension and length, and Pinot Noir finesse. The altitude and aspect of our plots lengthen the ripening period.
