Soil: Clay-limestone. Kimmeridgian marl
Harvest at optimal ripeness. Our grapes are conveyed by conveyor belt to the press. Pressing is gentle and slow to limit the extraction of plant compounds.
Alcoholic fermentation is carried out in thermoregulated stainless steel vats at low temperature in order to preserve the fruit and freshness as much as possible.
The initial nose is luscious, with notes of almond, apricot, and pastries dominating. After aeration, mineral notes mingle with aromas of lemon and orange peel. The wine continues to reveal its complexity with notes of pepper, pear, and white fruits, finishing with floral scents of rose petals.
The attack is supple. The palate presents a nice balance in roundness then the sweetness takes place, balanced by a slight bitterness giving a very long finish.
Serving temperature between 8 and 10°.
Appetizer, seafood, fish, cold starter or simply with goat cheese.
When drunk young, it will fully express its fruitiness and freshness. Aged for 4 or 5 years, it will bring additional complexity to the palate.
